Third-generation dairy farmer Joe Towers doesn’t have a lot in common with London’s hipster baristas. Or at least he didn’t until recently.

This rural entrepreneur from deepest Lancashire has joined forces with savvy caffeine experts to develop the UK’s first barista milk, specially designed for pouring into coffee. Cafes are lapping it up, java aficionados love it and Towers might well have saved the family farm.

He’s one of a small but growing number of UK farmers refusing to be defeated by the dairy crisis.
